ABSTRACT:
Proso millet (Panicum miliaceum L.) as a grass have life cycle of 70-100 days which is a warm season grass. It is a highly nutritious cereal grain that has been various purposes like production of ethanol, human consumption and/or bird seed. This crop has few unique characteristics like resistance against drought and heat tolerance, which makes it very promising crash crop but despite of all the nutritional value and uniqueness, this crop is underutilized in major parts of the world; so in this paper we will try to revel the excellent nutritional potential of the grain. Adzuki is also a good source of essential fatty acids, fiber, minerals, and phytochemicals such as polyphenols and phytates. Proso millet (Panicum miliaceum L.) is both a crop and a weed in many parts of the world. In this review, along with the the nutritional characteristics are discussed with the emphasis on the effect of processing on this nutrient and its health benefits are also discussed.
